Through the Art des Mets cooking school, the chef is introducing his guests to the professional techniques he uses for his fine dining cuisine and the culinary riches of his region.
The chef also partners with local schools to take younger generations on field trips to discover producers and their seasonal products as well as the culinary treasures of their region by harvesting saffron in the Val de Loire, picking asparagus, making goat cheese, discovering the fish of the Loire region and fishing techniques. The antique flooring which cracks underfoot, the vintage tapestries, the trumeaux tastefully adorning the fireplaces, the antique furniture... we offer a journey into the France of the past. Although I've been working here for over twenty years, I can't help but wonder how people lived in this era, and we have the pleasure of offering our guests a small piece of the answer."
